Ingredients

  • 1 lb. ground beef
  • 1 chopped onion
  • 1 tsp. granulated garlic or garlic powder
  • 1 (15 oz.) can tomato sauce with tomato pieces
  • 2 c. whole kernel corn, drained
  • 2 tsp. salt
  • 2 to 3 tsp. chili powder
  • 1/4 c. sliced, ripe olives
  • 3/4 c. cornmeal
  • 1 c. milk
  • 2 eggs, well beaten
  • 1 1/2 c. shredded Cheddar cheese

Directions

    Brown beef in skillet; add onion and cook until onion is soft. Drain fat.

    Add tomato sauce, corn, one teaspoon salt, granulated garlic and chili powder.

    Cover; simmer over medium-low heat for 15 minutes.

    Pour into a 9 x 13-inch baking pan.

    Top with sliced olives.
