Texmex Egg Casserole

  • 10 whole Eggs
  • 1/2 cups All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1/8 teaspoons Salt
  • 4 cups Cheese (anything That Melts Well)
  • 2 cups Cottage Cheese
  • 1/2 cups Butter, Melted
  • 1/2 pounds Breakfast Sausage, Cooked And Cooled
  • 1/4 cups Chopped Green Pepper (optional)
  • 2 cans Chopped Green Chilies (optional)
  • 1 can Black Beans, Drained (optional)
  • 1 whole Tomato, Chopped (optional)

Directions

    Preheat oven to 350 degrees. Grease a 13x9 baking dish.

    In a large bowl, beat eggs.

    Combine the flour, baking powder and salt. Add to egg mixture. Batter will be slightly lumpy.

    Add cheese, butter, sausage, and veggies. Stir to combine.

    Pour into baking dish. Bake, uncovered for 30-40 minutes, or until knife inserted in center comes out clean.

    Let stand 5-10 minutes before serving.

    Optional: Serve with sour cream and/or hot sauce.

    I've varied this recipe; you can use crumbled bacon, multiple cheeses, zucchini, ham ... the list goes on and on. Use whatever you like to eat. I also sometimes add a little heat with either red pepper flakes or cayenne.
