Ingredients

  • 4 oz. boneless skinless chicken, cooked and coarsely chopped (about 3/4 cup)
  • 1/2 cup coconut milk (not sweetened)
  • 1/4 cup chopped onion King Sooper's 1 lb For $0.99 thru 02/09
  • 1/4 cup lime juice
  • 3 Tbsp. soy sauce
  • 1 Tbsp. fresh grated gingerroot
  • 1 tsp. ground coriander
  • 1 tsp. sesame oil
  • 1/2 tsp. red curry paste
  • 1 cup creamy peanut butter
  • 1 pkg. (9-1/2 oz.) woven wheat crackers
  • 1 jar (8-1/2 oz.) mango chutney, finely chopped
  • 1/4 cup flaked coconut

Directions

    Place first 9 ingredients in food processor fitted with steel blade.

    Process for 1 to 2 minutes until smooth.

    Mix chicken mixture and peanut butter in bowl.

    Spread 1/4 teaspoon chutney on each wafer.

    Spoon or pipe 1 1/2 teaspoons peanut butter mixture onto each wafer.

    Sprinkle with coconut.

    Refrigerate until serving time.
