Ingredients

  • 2 cloves garlic, crushed
  • 3/4 c. olive oil
  • 2 c. cubed, stale French bread
  • 3 qt. romaine, in bite size pieces
  • 1/2 tsp. black pepper
  • 1/2 tsp. salt
  • 2 eggs, cooked 1 minute in boiling water
  • juice of 2 lemons
  • 1 can anchovy fillets, diced
  • 1/2 c. freshly grated Parmesan cheese

    Add garlic to oil and let stand several hours.

    Heat 1/4 cup garlic oil in a small skillet and saute croutons until browned on all sides.
