Thimble Cookies (Christmas Cookies)

- 1 lb butter
- 1 cup white sugar
- 4 eggs
- 2 teaspoons vanilla
- 4 cups flour
- 1 cup walnuts
- jam or jelly
Directions

1Mix flour and sugar together; add vanilla, egg yolks and butter.

2Mix well; roll into a large ball.

3Save the egg whites in a small bowl.

4Crush the walnuts as fine as you can.

5Roll dough into small balls (about a heaping tablespoon full.

6Roll these small balls in the egg whites.

7Then roll them in the crushed walnuts.

8Place on greased cookie sheet.

9Poke a hole in the middle about half way through with a thimble, or something around the same size.

10Place in the oven at 350°F for 7 minutes, then repoke the hole.

11Place back in the oven for 7 more minutes or until golden brown.

12Then fill in the hole with jam or jelly.

13Let cool.
