Three Bean - Pasta Salad

Ingredients

  • 1 (16 oz.) can cut wax beans
  • 1 (16 oz.) can cut green beans
  • 1 (16 oz.) can kidney beans
  • 8 oz. cooked pasta (ditalini)
  • 1/4 c. sugar
  • 1/2 c. cider vinegar
  • 1/4 c. oil (olive or peanut)
  • 1/4 c. finely chopped onion
  • 2 Tbsp. parsley, finely chopped
  • salt and freshly ground pepper to taste

Directions

    Cook and drain the pasta.

    Empty the beans and drain well. Place the beans and pasta in a mixing bowl.

    Add the sugar and vinegar; toss until sugar is dissolved.

    Add all the remaining ingredients.

    Toss well and chill at least 2 hours.

    Makes about 8 cups.
