  • 3 Tbsp. butter or margarine, divided
  • 1/4 c. all-purpose flour
  • 1 qt. milk
  • 2 tsp. dry mustard
  • 3/4 tsp. salt
  • 1/8 tsp. ground red pepper
  • 1 c. (4 oz.) shredded sharp Cheddar cheese
  • 1 c. (4 oz.) shredded Mozzarella cheese
  • 1/4 c. shredded Parmesan cheese
  • 8 oz. elbow macaroni, cooked
  • 1 c. soft breadcrumbs
  • 1 Tbsp. chopped fresh parsley

    Melt 2 tablespoons butter in a large heavy saucepan over low heat; whisk in flour until smooth. Cook, whisking constantly 1 minute. Gradually whisk in milk and next 3 ingredients; cook over medium heat, whisking constantly until mixture is thickened and bubbly. Remove from heat and whisk in cheeses until melted. Stir macaroni into cheese mixture and spoon into a lightly greased 2-quart baking dish. Melt remaining 1 tablespoon butter in a glass bowl in microwave at High 30 seconds. Stir in breadcrumbs and parsley. Sprinkle mixture over macaroni. Bake at 375° for 30 minutes or until top is lightly browned. Let stand 10 minutes. Yield: 8 servings.
