Three Cheese Manicotti

  • 1 1/2 c. water
  • 1 (8 oz.) can tomato sauce (1 c.)
  • 1 pkg. spaghetti sauce mix
  • 2 (8 oz.) c. shredded Mozzarella cheese
  • 1 (8 oz.) c. Ricotta or creamed-style cottage cheese
  • 1/2 c. grated Parmesan cheese
  • 2 eggs, beaten
  • 1/4 c. snipped parsley
  • 8 manicotti shells, cooked and drained
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

    In small saucepan, blend water, tomato sauce and spaghetti sauce mix; simmer uncovered for 10 to 12 minutes.

    Meanwhile, combine 1 cup Mozzarella, Ricotta and Parmesan cheese.

    Add eggs, parsley, salt and pepper.

    Mix lightly; stuff shells with cheese mixture using about 1/2 cup of mixture for each.

    Pour half of spaghetti sauce into 2-quart or 11 3/4 x 7 1/2 x 1 3/4-inch baking dish; arrange stuffed manicotti in dish.

    Pour remaining sauce over top.

    Sprinkle remaining 1 cup cheese and bake at 350° for 25 to 30 minutes.
