- 2 sweet red peppers
- 2 sweet yellow peppers
- 2 Tbsp. olive oil
- 1/2 tsp. dried whole thyme
- 1/4 tsp. salt
- 1/4 tsp. freshly ground pepper
- 2 c. jicama strips
Directions

1Seed peppers and cut into 1/4-inch strips.

2Saute peppers in oil 5 minutes or until crisp-tender.

3Stir in seasonings.

4Chill. Before serving, stir in jicama.
