  • 1 c. grated carrot and zucchini
  • 1/2 c. whole wheat flour, white flour and wheat germ
  • 1 egg
  • 1/4 c. oil
  • 1/2 c. crushed pineapple, drained
  • 1/2 c. applesauce
  • 1/4 c. brown sugar
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 c. raisins
  • 1/3 c. molasses
  • 1/2 tsp. cinnamon
  • 1/4 tsp. cloves
  • 1/4 tsp. ginger

    Mix dry ingredients; set aside.

    Mix oil, egg and molasses. Add vegetables.

    Gradually add dry ingredients into egg mixture. Pour into a 9 x 5-inch loaf pan, lightly oiled.
