  • 1/2 c. unsalted fat
  • 1/4 c. white sugar
  • 1 egg yolk, unbeaten
  • 1 tsp. vanilla
  • 1/4 tsp. lemon extract
  • 1 c. all-purpose flour
  • raspberry jam

Directions

    Cream vanilla and lemon extract into the fat; add sugar gradually.

    Beat eggs into the mixture thoroughly.

    Put flour in all at once.

    Stir to a thick dough.

    Shape the dough into small balls, using about 1 teaspoon of the mixture each time. Put on an ungreased cookie sheet.

    Make a dent in each ball with your floured thumb.

    Place a small amount of raspberry jam in each dent.

    Bake cookies about 15 minutes at 400°.

    Makes about 24 cookies.
