- 1/2 c. unsalted fat
- 1/4 c. white sugar
- 1 egg yolk, unbeaten
- 1 tsp. vanilla
- 1/4 tsp. lemon extract
- 1 c. all-purpose flour
- raspberry jam
Directions

1Cream vanilla and lemon extract into the fat; add sugar gradually.

2Beat eggs into the mixture thoroughly.

3Put flour in all at once.

4Stir to a thick dough.

5Shape the dough into small balls, using about 1 teaspoon of the mixture each time. Put on an ungreased cookie sheet.

6Make a dent in each ball with your floured thumb.

7Place a small amount of raspberry jam in each dent.

8Bake cookies about 15 minutes at 400°.

9Makes about 24 cookies.
