- 2 lb. small new potatoes, halved
- 1 1/2 Tbsp. olive oil
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 Tbsp. fresh thyme leaves
Directions

1Toss potatoes, oil, salt and pepper until potatoes are coated. Put in a 13 x 9 x 2-inch baking pan.

3Bake at 325° for 45 minutes or until potatoes are fork-tender.
