  • 2 lb. small new potatoes, halved
  • 1 1/2 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 Tbsp. fresh thyme leaves

Directions

    Toss potatoes, oil, salt and pepper until potatoes are coated. Put in a 13 x 9 x 2-inch baking pan.

    Toss in thyme leaves.

    Bake at 325° for 45 minutes or until potatoes are fork-tender.
