- 1 lb. dry pinto beans
- 6 lb. beef rump roast
- 1 Tbsp. shortening or lard
- 1 c. green pepper strips
- 2 sliced medium onions
- 2 c. tomato juice
- 1 (8 oz.) can tomato sauce
- 1/2 c. water
- 2 Tbsp. cider vinegar
- 2 Tbsp. brown sugar
- 2 tsp. salt
- 2 tsp. dry mustard
- 2 tsp. thyme
Directions

1Wash beans; cover with cold water overnight.

2Bring to boil and cook 1 hour.

3Drain and discard water.

4Brown meat in hot fat in Dutch oven or roaster.

5Add pepper and onions.

6Cook to tender. Add beans and remaining ingredients.

7Cover.

8Bake at 350° for 3 hours or until beans are tender.

9Makes 8 to 10 servings.
