Ingredients

  • 1 lb. dry pinto beans
  • 6 lb. beef rump roast
  • 1 Tbsp. shortening or lard
  • 1 c. green pepper strips
  • 2 sliced medium onions
  • 2 c. tomato juice
  • 1 (8 oz.) can tomato sauce
  • 1/2 c. water
  • 2 Tbsp. cider vinegar
  • 2 Tbsp. brown sugar
  • 2 tsp. salt
  • 2 tsp. dry mustard
  • 2 tsp. thyme

Directions

    Wash beans; cover with cold water overnight.

    Bring to boil and cook 1 hour.

    Drain and discard water.

    Brown meat in hot fat in Dutch oven or roaster.

    Add pepper and onions.

    Cook to tender. Add beans and remaining ingredients.

    Cover.

    Bake at 350° for 3 hours or until beans are tender.
