Ingredients

  • 2 cups folgers brewed coffee, cold
  • 36 -40 italian ladyfingers
  • 1 lb mascarpone
  • 1 (300 ml) caneagle brand sweetened condensed milk (regular or low-fat)
  • 1 cup whipping cream
  • 1 teaspoon vanilla extract
  • 12 cup semisweet chocolate, chopped

Directions

    Place cold coffee in a shallow bowl.

    Beat mascarpone, Eagle Brand and vanilla until well combined.

    Reserve.

    Whip cream in a large bowl until it holds stiff peaks.

    Gently fold into reserved mascarpone mixture until combined.

    Dipping both sides of each ladyfinger into cold coffee, line bottom of a 9x13-inch pan with 18 ladyfingers in 3 rows, trimming edges if necessary.

    Spread half the mascarpone filling (about 2 cups) on top.

    Dip remaining ladyfingers in coffee and arrange over filling in pan.

    Spread mascarpone filling on top and sprinkle witrh chopped chocolate.

    Chill, covered, at least 4 hours.
