Toasted Onion Soup

  • 6 to 8 medium sized onions
  • 3/4 c. butter
  • 1 c. grated Swiss cheese
  • 3 qt. chicken broth
  • 1/2 c. red wine
  • dash of black pepper
  • 2 Tbsp. flour

Directions

    Slice onions, then saute in butter until transparent.

    Stir in flour and simmer 2 minutes.

    Stir in chicken broth, wine and cheese.

    Bake at 250° for 3 to 8 hours.

    Stir occasionally.

    The longer it bakes, the browner it gets.

    Beef broth may be used instead of chicken.

    Don't salt until you taste.
