Toasted Onion Soup

- 6 to 8 medium sized onions
- 3/4 c. butter
- 1 c. grated Swiss cheese
- 3 qt. chicken broth
- 1/2 c. red wine
- dash of black pepper
- 2 Tbsp. flour
Directions

1Slice onions, then saute in butter until transparent.

2Stir in flour and simmer 2 minutes.

3Stir in chicken broth, wine and cheese.

4Bake at 250° for 3 to 8 hours.

5Stir occasionally.

6The longer it bakes, the browner it gets.

7Beef broth may be used instead of chicken.

8Don't salt until you taste.
