Toasted Rice

  • 2 c. rice
  • 2 Tbsp. butter
  • 2 cans consomme
  • 1 c. water
  • 6 or 8 green onions, sliced
  • 2 to 4 Tbsp. soy sauce

Directions

    Toast rice in heavy uncovered pan in a 350° oven for 45 minutes. Melt butter in heavy pan with tight fitting lid.

    Brown rice slightly in the butter; pour in liquids and bring to a boil. Turn heat very low; cover and let steam for 25 to 30 minutes. Stir in finely chopped onions, including tops, and soy sauce. Remove from heat, but keep covered and let steam for a few more minutes.
