Ingredients
- 1 1/2 lb. tofu, mashed
- 1/3 c. ketchup
- 1/3 c. soy sauce
- 2 Tbsp. Dijon mustard
- 1/2 c. parsley, chopped
- 1/4 tsp. black pepper
- 1 medium onion, chopped fine
- 1/4 tsp. garlic powder
- 1 c. whole grain bread crumbs, rolled oats or corn flakes, crushed
Directions

1Mix all ingredients together.

2Put 1/4 cup oil in loaf pan, then press mixture into pan.

3Bake for about 1 hour.

4Let cool 10 to 15 minutes before trying to remove from pan.

5Garnish with ketchup and parsley.

6Also good sliced and fried for sandwiches the next day.
