  • 1 c. whole wheat flour
  • 3 tsp. baking powder
  • 1/4 c. mashed tofu
  • 1/4 c. vegetable oil
  • 3 Tbsp. honey
  • 1 c. milk

Directions

    Preheat oven to 425°.

    Grease muffin tins.

    Mix dry ingredients in a bowl.

    Combine remaining ingredients in blender and blend until smooth.

    Pour mixture from blender over the dry ingredients and stir until all ingredients are moistened.

    Fill muffin tins 3/4 full and bake for 12 to 15 minutes or until light brown.

    Makes 10 muffins.

    Serve with honey.
