  • 1 (16 1/2 oz.) well blended tofu
  • 1 (16 oz.) fresh or canned pumpkin
  • 3/4 c. well packed brown sugar
  • 2 egg whites
  • 2 tsp. cinnamon
  • 1 tsp. pumpkin spices
  • 1/4 tsp. salt

Directions

    Blend tofu in a food processor or blender until real creamy and smooth.

    Add brown sugar, pumpkin, egg whites and spices. Blend well.

    Pour in a 9-inch unbaked pie shell.

    Bake approximately 1 hour in a preheated 400° oven or until a toothpick inserted in center comes almost clean.

    Cool and serve.
