- 1 (16 1/2 oz.) well blended tofu
- 1 (16 oz.) fresh or canned pumpkin
- 3/4 c. well packed brown sugar
- 2 egg whites
- 2 tsp. cinnamon
- 1 tsp. pumpkin spices
- 1/4 tsp. salt
Directions

1Blend tofu in a food processor or blender until real creamy and smooth.

2Add brown sugar, pumpkin, egg whites and spices. Blend well.

3Pour in a 9-inch unbaked pie shell.

4Bake approximately 1 hour in a preheated 400° oven or until a toothpick inserted in center comes almost clean.

5Cool and serve.
