  • 8 ounces extra-firm tofu
  • 1/4 cup reduced-calorie salad dressing (such as Miracle Whip Light)
  • 1 tablespoon dill pickle relish
  • 1 teaspoon prepared mustard
  • 1/8 teaspoon salt
  • 1/8 teaspoon dried dill
  • 1/8 teaspoon freshly ground black pepper

    Press tofu between paper towels to remove excess moisture; cut into 1/4-inch cubes.

    Combine salad dressing and next 5 ingredients in a medium bowl, stirring until blended. Add half of tofu, mashing with the back of a large spoon. Add remaining tofu, stirring gently.
