Tofu Salad

Ingredients
- 1 block firm tofu, drained and cubed
- 1 (16 oz.) can salmon, drained and flaked
- 1 large tomato, diced
- 1 small onion, chopped
- 1 (12 oz.) pkg. bean sprouts
- 1 bunch watercress, cut in 1 1/2-inch pieces
- 1/2 c. chopped green onions
- 1/2 c. salad oil
- 3 cloves garlic, minced
- 3/4 c. soy sauce
Directions

1On a large platter, spread ingredients in layers in the following order: tofu, salmon, tomato, onion, bean sprouts, watercress and 1/4 of the green onions.

2In a saucepan, combine salad oil and garlic; bring to a boil.

3Remove from heat and add soy sauce and the remaining green onions; mix well.

4Pour dressing over salad; serve immediately.

5Makes 8 servings.
