Tofu Spinach Lasagna

Ingredients
- 1/2 lb. lasagna noodles
- 2 (10 oz.) pkg. frozen chopped spinach
- 1 lb. soft tofu
- 1 lb. firm tofu
- 1 Tbsp. sugar
- 1/2 tsp. garlic powder
- 2 Tbsp. lemon juice
- 3 tsp. chopped basil or Italian seasoning
- 2 tsp. salt
- 4 c. spaghetti sauce
Directions

1Preheat oven to 350°.

2Use 9 x 13-inch pan.

3Defrost spinach and drain.

4Place tofu, sugar, garlic powder, lemon juice and 1 teaspoon salt.

5Blend until smooth.

6Taste, add more salt, if necessary.

7Cover bottom of pan with sauce.

8Layer noodles, 1/2 tofu filling and 1/2 spinach.

9Repeat layering, ending with noodles.

10Cover with sauce.

11Bake 25 to 30 minutes.

12Serves 6 to 8.
