  • 1 teaspoon rosemary
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon sea salt
  • 2 12 lbs chicken, split at backbone and flattened
  • black pepper
  • 14 cup extra virgin olive oil

Directions

    Preheat oven to 400 degrees .

    Mix herbs and salt and rub mixture into skin of chicken.

    Heat oil in skillet.

    Place chicken in skillet, skin side down.

    Weigh chicken down with foil-wrapped brick or second skillet.

    Cook 15 minutes, then place in oven and cook another 30 minutes.
