- salt water
- milk
- 3/4 c. yellow cornmeal
- 1/4 c. flour
- 2 tsp. salt
- 1 tsp. cayenne pepper
- 1/4 tsp. garlic powder
- 4 catfish fillets or 2 lb. catfish nuggets
- canola oil
Directions

1Fill the kitchen sink with cool water; add about 2 to 3 tablespoons salt and swish around.

2Place catfish in water for approximately 30 minutes.

3Remove fish from water, rinse and place in large bowl of milk.

4Combine cornmeal, flour, salt, cayenne pepper and garlic powder.

5Dredge catfish with mixture, shaking off excess.

6Fill deep skillet half full with canola oil.

7Heat to 350°.

8Add catfish in a single layer and fry until golden brown, 5 to 6 minutes, depending on size.

9Remove and drain on paper towels.

10Makes 4 servings.
