  • 1 small baguette
  • 2 Tablespoons olive oil
  • 1 ripe avocado
  • fresh lemon juice
  • 1 pint grape tomatoes, quartered
  • coarse salt
  • ground pepper

    Preheat oven to 350

    Slice baguaette diagonally into sixteen 1/2-inch slices; brush both sides with a total of 2 tablespoons olive oil.

    Bake on a baking sheet until golden, about 8 minutes.

    Halve avocado lengthwise and rmove pit. Scoop flesh into a small bowl.

    Mash avocado with lemon juice, season with salt and pepper.

    Spread on toasted bread.

    Top with grape tomatoes.
