- 1 small baguette
- 2 Tablespoons olive oil
- 1 ripe avocado
- fresh lemon juice
- 1 pint grape tomatoes, quartered
- coarse salt
- ground pepper
Directions

1Preheat oven to 350

2Slice baguaette diagonally into sixteen 1/2-inch slices; brush both sides with a total of 2 tablespoons olive oil.

3Bake on a baking sheet until golden, about 8 minutes.

4Halve avocado lengthwise and rmove pit. Scoop flesh into a small bowl.

5Mash avocado with lemon juice, season with salt and pepper.

6Spread on toasted bread.

7Top with grape tomatoes.
