Ingredients
- 2 lb. ripe tomatoes or 2 (15 oz.) cans tomatoes, chopped
- 1 medium onion, chopped
- 1 Tbsp. butter
- 1 bay leaf
- 1 heaping tsp. brown sugar
- 2 tsp. basil, finely chopped
- 2 whole cloves
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 pt. light cream
- 1 c. milk
- 6 large croutons, buttered
- 2 Tbsp. chives, chopped
Directions

1Peel and seed tomatoes.

2Saute onion in butter and add the chopped tomatoes, bay leaf, sugar, cloves, salt, pepper and basil. Simmer, stirring occasionally, until tomatoes are thoroughly cooked, about 25 minutes.

3Remove bay leaf and cloves and transfer soup to blender or food processor to puree.

4Add cream and milk and heat.

5Serve topped with toasted buttered croutons.

6Sprinkle with chives.
