Tomato Cabbage Soup

  • 1 1/2 c. onion
  • 2 minced cloves garlic
  • 4 c. (1 1/2 lb.) chopped cabbage
  • 3 Tbsp. olive oil
  • 2 Tbsp. flour
  • 4 c. (2 1/2 lb.) crushed tomatoes
  • 1 c. water
  • 2 Tbsp. lemon juice
  • 2 Tbsp. sugar

Directions

    In a large soup kettle, cook garlic, onion and cabbage in oil over low heat, stirring, until softened.

    Add flour and stir and cook 3 minutes.

    Add tomatoes, water and seasonings.

    Salt to taste.

    Bring to a boil, then lower heat and simmer one hour.
