Tomato Casserole

Ingredients

  • 1/2 c. Pepperidge Farm corn bread stuffing
  • 1 (No. 1) can tomatoes
  • 1 Tbsp. melted butter
  • 1 Tbsp. bacon drippings
  • 1/4 tsp. seasoned salt
  • 2 tsp. sugar
  • 3/4 c. grated sharp cheese
  • 1 c. sliced Vidalia onions
  • 1/4 tsp. oregano

Directions

    Spread bottom of pie plate with stuffing.

    In skillet, mix tomatoes, butter, drippings, salt and sugar.

    Heat until well blended.

    Put 1/2 tomato mixture on top of stuffing.

    Put 1/2 cheese on top of this.

    Place all onions on top of cheese.

    Layer remaining tomatoes, then remaining cheese.

    Sprinkle with oregano. Bake at 350° for 30 minutes.

    Excellent Lenten dish.
