  • 1 gal. ripe tomatoes
  • 1 lb. sugar
  • 1 tsp. black pepper
  • 4 tsp. ground cloves
  • 4 tsp. ground mustard
  • 4 tsp. cinnamon
  • 1 qt. vinegar
  • 1 tsp. cayenne pepper
  • 4 tsp. salt

Directions

    Boil tomatoes until soft; strain through a sieve.

    Add vinegar, sugar, cayenne pepper, black pepper, cloves, mustard and salt.

    Boil down until it is 1/4 of its bulk and add cinnamon. Bottle, seal and process.

    Makes 4 to 5 pints.
