- 4 c. tomatoes, peeled, cored and chopped
- 1 c. chopped onion
- 1/2 c. chopped sweet red or green pepper
- 1 1/2 tsp. celery seed
- 1 tsp. mustard seed
- 1 tsp. whole allspice
- 1 stick cinnamon
- 1 c. sugar
- 1 Tbsp. salt
- 1 1/2 c. vinegar
- 1 Tbsp. paprika
Directions

1Cook tomatoes, onions and peppers until soft.

2Press through food mill.

3Cook rapidly until thick, about 1 hour.

4Tie whole spices in a cheesecloth bag.

5Add sugar and salt to tomato mixture. Cook gently about 25 minutes, stirring frequently.

6Add vinegar and paprika and cook until thick.

7As mixture thickens, stir frequently to prevent sticking.

8Pour boiling hot into sterilized jars leaving 1/8-inch headspace.

9Yields 3 pints.
