Tomato Cheese Dip

Ingredients
- 3 Tbsp. olive oil
- 1 c. onion, chopped
- 1 c. green pepper, chopped
- 3 cloves garlic, finely minced
- 2 c. tomato juice
- 1/2 tsp. thyme
- 1 bay leaf, finely crushed
- 1/2 tsp. salt
- 1/2 tsp. Tabasco sauce
- 1 3/4 lb. American cheese, grated
Directions

1Heat oil in pan.

2Add onion, green pepper and garlic; saute slowly until tender.

3Add tomato juice and seasonings.

4Simmer, covered, for 10 to 15 minutes.

5Add grated cheese; stir over very low heat until cheese is melted and blended with tomato juice mixture.

6Keep hot in chafing dish.

7Serve with crackers.

8Makes about 4 cups.
