  • 1 (9-inch) pie shell
  • 2 c. peeled, chopped tomatoes
  • 1 tsp. basil
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 tsp. sugar
  • 1/2 c. chopped onion
  • 2 eggs
  • 2 Tbsp. flour
  • 1 c. evaporated milk
  • 1/2 c. grated Swiss cheese
  • 1/2 c. Cheddar cheese

Directions

    Put tomatoes in pie shell.

    Sprinkle with basil, salt, pepper, sugar and onion.

    Spread all cheese over tomatoes.

    Combine eggs, flour and milk.

    Pour over cheese.

    Bake at 375° (350° for glass), 40 to 45 minutes or until set.
