Ingredients
- 3 to 4 large tomatoes
- 1 1/2 tsp. grated lemon rind
- 1/4 c. lemon juice
- 6 1/2 c. sugar
- cinnamon to taste
- 1 bottle pectin
Directions

1Scald, peel and chop tomatoes.

2Place in a saucepan.

3Bring to a boil.

4Reduce heat.
-
5Simmer for 10 minutes.

6Measure 3 cups of tomatoes.

7Place in a large saucepan.

8Add lemon rind, lemon juice and sugar.

9Mix well.
-
10Place over high heat.
-
11Bring to a full, rolling boil.

12Boil hard for 1 minute, stirring constantly. Remove from heat.

13Add pectin immediately.

14Skim off foam with metal spoon.

15Stir for 5 minutes to cool.

16Pour into sterilized jars.
-
17Cover at once with 1/8-inch melted paraffin.

18Yields 4 pints.
