Tomato Mash/Hash

  • 5 potatoes
  • 1 onion
  • 2 eggs
  • 2 teaspoons mixed herbs, such as basil
  • 12 cup sun-dried tomato, in water

Directions

    Peel and cook potatoes.

    Mash and season with pepper.

    Finely chop onion and soften in a pan in a little oil.

    Add to potatoes with eggs.

    Mix until smooth and creamy.

    Stir in herbs and chopped sun-dried tomatoes.

    Spoon mixture into a non-stick frying pan sprayed with a little oil.

    Cook over a medium heat for 5-6 minutes either side, or shape mixture into 4 patties and cook.
