Tomato Pie

  • 1 c. fresh bread crumbs
  • 3 c. sliced peeled vine-ripened tomatoes
  • 1/3 c. thinly sliced onion
  • 2 c. (6 oz.) grated mild Cheddar cheese
  • 2 large eggs, beaten lightly
  • 3 strips bacon, halved crosswise

Directions

    Preheat oven to 325° and grease a 9-inch pie plate.

    Sprinkle 1/2 cup bread crumbs evenly on bottom of pie plate.

    Arrange half of tomatoes on bread crumbs and top with half onion.

    Sprinkle half of cheese on top of onion.

    Repeat layering with remaining tomatoes, onions and cheese.

    Pour eggs over cheese and add salt and pepper to taste.

    Top pie with remaining 1/2 cup of bread crumbs.

    Arrange bacon on top of pie and bake on middle rack of oven 45 minutes or until bacon is crisp.

    Serves 4 to 6.
