- 450 ripe baby tomatoes
- 450 grams granulated sugar
- 1 lemons, juice and rind
- 1 ground cinnamon or ginger
Directions

1Blanch tomatoes in boiling water to skin them

2Put ina bowl cover with the sugar and stand overnight

3Drain juice into a pan and boil to a heavy syrup

4Add tomatoes rind and juice of the lemon and the spice of your choice.

5And cook until quite thick

6Pot it on screw top jars
