  • 450 ripe baby tomatoes
  • 450 grams granulated sugar
  • 1 lemons, juice and rind
  • 1 ground cinnamon or ginger

    Blanch tomatoes in boiling water to skin them

    Put ina bowl cover with the sugar and stand overnight
  3. 3
    Drain juice into a pan and boil to a heavy syrup
  4. 4
    Add tomatoes rind and juice of the lemon and the spice of your choice.

    And cook until quite thick

    Pot it on screw top jars
