- 2 cups unsalted vegetable stock
- 1 12 tablespoons canola oil
- 1 small onion, minced
- 1 cup long-grain rice
- 1 teaspoon salt
- 12 teaspoon ground cumin
- 1 medium tomatoes, chopped
- 1 tablespoon fresh cilantro, chopped (or more to taste)
Directions

1Heat oil in large saucepan.

2Add onion and rice and cook over medium heat until the onion is just softened, about 5 minutes.

3Stir in salt, cumin, tomato and cook 1 minute more, stirring.

4Add stock, stirring to blend.

5Bring to a boil, then lower the heat, cover, and cook until the rice is tender and all the liquid is absorbed, 30-40 minutes.

6DO NOT REMOVE THE LID DURING THIS TIME.

7Fluff the rice with a fork and stir in the cilantro.

8Serve immediately.
