- 2 (14 1/2 oz.) cans stewed tomatoes
- 1 1/2 c. Minute rice
- 3/4 c. hot water
- 1 lb. lean ground beef
- 1 small jar mushrooms, sliced
- 1 small onion, chopped fine
- salt to taste
- Velveeta cheese
Directions

1In 9 x 9-inch square baking dish, place tomatoes, rice and water.

2Set aside.

3In skillet, brown beef, onion and mushrooms. Salt to taste; drain fat.

4Add to ingredients in baking dish. Place in oven for 15 minutes.

5Cover top with cheese and bake until melted.
