- 1 large lime
- 2 lb. ripe tomatoes (about 4 large), diced
- 1/2 small red onion, finely diced
- 1 small jalapeno chile, seeded and finely chopped
- 2 Tbsp. chopped fresh cilantro
- 3/4 tsp. salt
- 1/4 tsp. black pepper
Directions

1From lime, grate 1/2 tsp. peel and squeeze 2 tablespoons juice.

2In medium bowl, combine lime peel and juice, tomatoes, onion, chile, cilantro, salt, and pepper; stir gently.

3Cover and refrigerate at least 1 hour to blend flavors.

4May be refrigerated up to 2 days. Makes about 3 cups.
