Ingredients

  • 1/2 cup of olive oil
  • 3 clove of garlic
  • 1 large shallot diced
  • 2 green onion bulbs diced
  • 1 cup of ketchup
  • 1 tbsp of red pepper flakes
  • 1/2 cup of shredded pamesan cheese
  • 4 ripe tomatoes
  • 1 tbsp of sea salt
  • 1 tbsp of garlic powder
  • 6 leaves of fresh Basil julienned

    wash, score, and boil tomatoes

    shock tomatoes in ice bath, and peel when cool enough to handle

    dice tomatoes

    heat olive oil and saute all onions/shallots until translucent
  5. 5
    dice garlic and smear with sea salt to make a paste
  6. 6
    add to pan and cook on medium heat for 2 -3 minutes

    add tomatoes, ketchup and red pepper flakes, garlic powder, parmesan cheese and half of Basil

    cook on low for 30 minutes, add remaining Basil as garnish
