  • 1 tablespoon olive oil
  • 1 white onion, chopped
  • 2 cloves garlic, minced
  • 2 cups stock
  • 1 (15.5 ounce) can white beans
  • 1 (14.5 ounce) can diced tomatoes
  • 2 stalks celery, finely chopped
  • 1 bay leaf
  • 1 tablespoon smoked paprika
  • 1 medium apple, thinly sliced and peeled.
  • 1/2 cup red wine
  • salt and pepper to taste
