Tomato Soup

  • 1 roasted red pepper fresh or canned
  • 1 onion chopped
  • 3 11/16 tablespoons olive oil
  • 1 can whole peeled tomatoes
  • 1 pinch salt to taste
  • 2 teaspoons sugar
  • 2 7/8 cups bread from the previous day
  • 1 bunch cilantro mint, or basil, to taste

Directions

    Combine the pepper and onion in a food processor and grind for several seconds.

    Heat the olive oil in a pot, then add the ground pepper and onion and saute for approximately 8 minutes.

    Add the can of tomatoes, with the juice. Season the mix with salt, add the sugar, and cook on high for approximately 30 minutes, stirring regularly.

    After 30 minutes, puree the mix using a hand mixer or food processor for about 3 seconds on medium to low speed.

    Add the bread and the cilantro, mint, or basil and stir well for a few seconds.
