Ingredients

  • 8 lb. or 4 large cans tomatoes
  • 2 stalks celery (with leaves)
  • 5 whole cloves
  • 1 bay leaf
  • 1 sprig parsley
  • 4 Tbsp. soft margarine
  • 4 Tbsp. flour
  • 3 tsp. salt
  • 3 Tbsp. sugar

Directions

    Bring the first 5 ingredients to a boil and simmer 2 hours. Strain. Blend the remaining ingredients. Add this blended mixture to the tomato mixture slowly.

    Bring to a boil. Sprinkle with cloves when serving.

    This is a good way to use surplus tomatoes in the fall.
