Ingredients
- 1 small onion, chopped
- 3 Tbsp. butter
- 6 large ripe tomatoes
- 2 tsp. salt
- 1/4 tsp. baking soda
- 1/4 to 1/2 tsp. sage
- 1 c. heavy cream or half and half
- 1 c. milk
- 4 Tbsp. flour
Directions

1Peel tomatoes; seed and chop.

2(Place tomatoes in boiling water for about 1 minute, then place in cold water; skins will come right off.)

3Remove seeds and squish tomatoes through your fingers.

4(I find this much more entertaining than chopping.) Saute onion in butter about 5 minutes.

5Add tomatoes, salt, soda and sage.

6Simmer about 15 minutes.

7Mix milk and flour and add slowly.

8Add cream and heat.

9Normally we double this recipe.
