Tomato Tofu Pie

Ingredients
- 1 medium onion, chopped
- 1 Tbsp. oil
- 1 c. spaghetti sauce
- 1/2 tsp. or less salt
- dash of pepper
- 1 lb. firm tofu, drained, patted dry with towel and chopped in small pieces
- 6 oz. part-skim Mozzarella cheese, grated
- 2 Tbsp. chopped fresh parsley
- 9-inch pie crust (optional)
Directions

1Saute onion in oil.

2Add sauce, salt and pepper; stir 5 minutes.

3Remove from heat and add tofu and most of the cheese (save some for top).

4Stir together and pour into a 9-inch round baking dish or pie crust.

5Top with remaining cheese.

6Sprinkle with parsley.

7Bake at 350° for 20 to 30 minutes.
