Tomato Tofu Pie

Ingredients

  • 1 medium onion, chopped
  • 1 Tbsp. oil
  • 1 c. spaghetti sauce
  • 1/2 tsp. or less salt
  • dash of pepper
  • 1 lb. firm tofu, drained, patted dry with towel and chopped in small pieces
  • 6 oz. part-skim Mozzarella cheese, grated
  • 2 Tbsp. chopped fresh parsley
  • 9-inch pie crust (optional)

Directions

    Saute onion in oil.

    Add sauce, salt and pepper; stir 5 minutes.

    Remove from heat and add tofu and most of the cheese (save some for top).

    Stir together and pour into a 9-inch round baking dish or pie crust.

    Top with remaining cheese.

    Sprinkle with parsley.

    Bake at 350° for 20 to 30 minutes.
