- 2 Tbsp. olive oil
- 2 Tbsp. butter
- 1 c. finely chopped onion
- 1/2 c. chopped carrot
- 2 gloves minced garlic
- 2 Tbsp. dried basil
- 2 cans tomatoes, pureed
- 1/2 pt. cream
- 2 Tbsp. curry
- 1 lb. cooked tortellini
Directions

1Heat olive oil and butter; add onion and garlic.

2Cook until soft.

3Add carrots; cook 4 minutes.

4Add basil; cook 2 minutes. Add tomatoes; put sauce back into pan.

5Add cream and curry.

6Stir thoroughly.

7Serve over pasta with freshly grated cheese.
