Ingredients
- 3 eggs
- 1 cup non fat milk
- 1/2 diced red bell pepper
- 1/2 diced yellow bell pepper
- 1/2 diced onion
- 6 sun dried tomatoes
- 6 cherry tomatoes halved
- 5 sliced mushrooms
- 2 flour or corn tortilla cut in wedges
- 1/2 cups Mozzarella
- 1 teaspoon dried parsley
- 3 tablespoons oil olive
Directions

1Whisk 3 eggs and the milk in a bowl set aside

2Heat 2 tbsp of olive oil and pan fry the tortilla wedges. When golden brown take out of the pan and set aside

3Heat 1 tbsp of olive oil and saute the bell peppers, onion, cherry tomatoes and mushrooms until soft

4Now add the pan fried tortilla wedges and stir through the vegetables

5Lower the heat to medium before adding the egg mixture

6Add the sun dried tomatoes

7Simmer for 10 minutes

8Optional add some Mozzarella cheese and parsley

9Ready to serve
