Ingredients

  • 1 whole chicken, cooked, deboned and chopped
  • 8 cans chicken broth OR about 14 1/2 c. broth from boiling chicken with bouillon added
  • 1 large onion, chopped
  • 2 cloves garlic, crushed
  • 1 can Ro-Tel
  • 1/2 tsp. cumin
  • 2 cans Ranch Style beans with jalapenos
  • 1/2 bunch cilantro leaves, chopped
  • tortilla chips, crushed
  • Monterey Jack cheese, shredded

Directions

    Simmer spices and onion in broth until onions are transparent. Add chicken and beans.

    Right before serving add chopped cilantro. Serve in bowls over crushed tortilla chips.

    Top with shredded Monterey Jack cheese.
