Tortilla Soup

Ingredients

  • 4 to 6 boneless, skinless chicken breasts, cooked and cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 (4 oz.) can green chilies, chopped
  • 1 can Ro-Tel tomatoes, diced
  • 1 large can whole tomatoes, pureed in blender
  • 4 c. chicken broth
  • 1 can whole kernel corn
  • shredded cheese (Monterey Jack)
  • white corn tortilla chips

Directions

    Saute onion, garlic, green chilies and Ro-Tel tomatoes in 4 tablespoons butter in a large pot.

    Add tomatoes, broth and corn. Bring to a boil and simmer for 30 minutes.

    Add cubed chicken and simmer 15 to 30 minutes longer.

    (The longer this simmers, the better the flavor.)

    Serve over tortilla chips and top with shredded cheese.
