- 1 large onion, chopped
- 3 Tbsp. oil
- 4 corn tortillas, chopped
- 6 cloves garlic, minced
- 1 Tbsp. fresh cilantro
- 2 cans tomato puree
- 2 qt. chicken broth
- 1 Tbsp. ground cumin
- 2 tsp. chili powder
- 2 bay leaves
- 1/8 tsp. red pepper
- 3 corn tortillas
- oil
- 2 skinned and boned chicken breasts
- 1 avocado, peeled and cubed
- 1 c. grated cheese
Directions

1Heat 3 tablespoons oil in Dutch oven.

2Cook 4 tortillas, garlic and cilantro until tortillas are soft.

3Add onion, tomato puree and next 5 ingredients.

4Boil and simmer for 30 minutes. Remove bay leaves.
